Fiesta Mexicana
- 1 can refried beans
- 1 pkg. taco seasoning
- 4 green onions, sliced
- 10 cherry tomatoes or 1 medium tomato, chopped
- 1 large ripe avocado, chopped, sprinkled with lemon juice to keep from turning
- 1/2 to 3/4 can sliced black olives
- 1/3 c. chopped jalapeno peppers
- 6 oz. grated sharp cheese
- 6 oz. Monterey Jack cheese, grated
- 1/2 pkg. alfalfa sprouts
- Layer ingredients in the order given.
- Mix the taco seasoning with the refried beans.
- Spread beans on large dinner plate, leaving about a 2-inch margin.
- Layer each (onions, tomatoes, avocado, olives and peppers).
- When placing cheese, sort of mold it and alfalfa sprouts with hands to form a ball-like mound. Chill and serve (scoop) with nacho chips.
