Chicken Cordon Bleu
- 1/3 c. butter or margarine
- 1/3 c. bread crumbs
- 1/3 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 6 boneless chicken breast halves
- 12 oz. cream of chicken soup
- 6 slices ham
- 2 eggs, beaten
- 1/2 c. half and half
- 1 c. shredded Mozzarella cheese
- Heat oven to 400u0b0.
- Melt margarine or butter in a 13 x 9 x 2-inch pan in oven.
- Mix bread crumbs, cheese, salt and pepper. Dip chicken in eggs and roll in crumb mixture.
- Place in pan. Bake, uncovered, 35 to 40 minutes.
- Fold ham slice in half and place on top of chicken.
- Heat cream of chicken, half and half and Mozzarella cheese in a saucepan over medium heat.
- Stir occasionally until cheese is melted.
- Pour over ham and chicken.
