Arabic Bread(Pita)

  1. Dissolve sugar in water in bowl; sprinkle yeast over sugar and water mixture.
  2. Let stand 10 minutes.
  3. Combine all ingredients; work into a medium-stiff dough.
  4. Knead until smooth and elastic (8 to 10 minutes).
  5. Cover and let rise until doubled in size.
  6. Form into small balls and roll each
  7. ball into 1/4-inch thick circles. Cover with a tea towel and let rise again 15 to 30 minutes.
  8. Heat oven and cookie sheet to 500u0b0.
  9. Turn circles of dough over onto hot cookie sheets
  10. and bake for 2 to 5 minutes (just until they puff up).
  11. Turn over and bake for a few seconds until light brown on the other side.
  12. Cool and store in plastic bags or freeze.
