Arabic Bread(Pita)
- 1 tsp. sugar or honey
- 2 c. lukewarm water
- 1 (1 Tbsp.) pkg. dry active yeast
- 2 tsp. salt
- 6 c. whole wheat flour
- Dissolve sugar in water in bowl; sprinkle yeast over sugar and water mixture.
- Let stand 10 minutes.
- Combine all ingredients; work into a medium-stiff dough.
- Knead until smooth and elastic (8 to 10 minutes).
- Cover and let rise until doubled in size.
- Form into small balls and roll each
- ball into 1/4-inch thick circles. Cover with a tea towel and let rise again 15 to 30 minutes.
- Heat oven and cookie sheet to 500u0b0.
- Turn circles of dough over onto hot cookie sheets
- and bake for 2 to 5 minutes (just until they puff up).
- Turn over and bake for a few seconds until light brown on the other side.
- Cool and store in plastic bags or freeze.
