Beans And Rice

  1. Drain the cooked beans and mash 3 tablespoons to a paste with a fork, adding a little water if necessary.
  2. Heat the oil and fry the onion, garlic and pepper until soft.
  3. Add the tomatoes and cook for a further 2 minutes.
  4. Add the bean paste and stir.
  5. Add the cooked beans and uncooked rice and enough water to cover.
  6. Bring to a boil.
  7. Cover and simmer for 20 to 25 minutes until the rice is done.
  8. Serve hot.
  9. Preparation time:
  10. 15 minutes.
  11. Cooking time:
  12. 1 to 1 1/2 hours for the beans and 25 to 30 minutes for the finished dish.
