Beans And Rice
- 1 c. black beans, soaked overnight and cooked until soft
- 2 Tbsp. olive or vegetable oil
- 4 cloves garlic, crushed
- 2 large tomatoes, skinned and finely chopped
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 1/4 c. long grain rice
- salt and pepper
- Drain the cooked beans and mash 3 tablespoons to a paste with a fork, adding a little water if necessary.
- Heat the oil and fry the onion, garlic and pepper until soft.
- Add the tomatoes and cook for a further 2 minutes.
- Add the bean paste and stir.
- Add the cooked beans and uncooked rice and enough water to cover.
- Bring to a boil.
- Cover and simmer for 20 to 25 minutes until the rice is done.
- Serve hot.

- 15 minutes.
- Cooking time:
- 1 to 1 1/2 hours for the beans and 25 to 30 minutes for the finished dish.
