Luann'S Microwave Spice Chicken
- 1 c. V-8 juice cocktail
- 2 tsp. red wine vinegar
- 2 tsp. hot sauce
- 1/2 tsp. oregano
- 1/2 tsp. garlic powder
- 1 lb. boneless cleaned chicken breasts
- 2 Tbsp. celery, chopped
- 2 Tbsp. green pepper, chopped
- 2 Tbsp. chopped onion
- 1 Tbsp. cornstarch
- Mix V-8, vinegar, hot sauce, oregano and garlic powder. Marinate chicken breasts in this mixture for 1/2 hour; reserve marinade.
- Place chicken breasts on microwave-safe plate and cover with plastic wrap; microwave on Medium-high for 10 minutes.
- Place cooked chicken back into marinade and add celery, green pepper and onion.
- Microwave on High for 4 minutes.
- Mix cornstarch into marinade and chicken until blended and place in microwave on High for 2 minutes.
- Serve over rice with remaining marinade.
