Bavarian Apple Strudel
- 1/4 c. apple juice concentrate
- 1 Tbsp. plus 1 tsp. vanilla sugar or plain granulated sugar
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- pinch of ground cloves
- 2 large green apples, peeled, cored and sliced lengthwise (pippin or Granny Smith)
- 1 large Golden Delicious apple, peeled, cored and sliced lengthwise
- 3 Tbsp. amaretti or crisp gingersnap cookie crumbs
- 7 (12 x 17-inch) sheets phyllo dough, thawed if frozen
- butter flavored vegetable cooking spray
- confectioners sugar
- Preheat oven to 400u0b0.
- In large skillet over medium heat, combine undiluted apple juice concentrate and 1 tablespoon sugar. Place over medium heat; bring to a boil.
- Add cinnamon, nutmeg and cloves; boil 1 to 2 minutes or until thick and syrupy.
- Add apples; cook over medium heat, 2 to 3 minutes or until tender but not mushy when pierced with a fork, stirring occasionally. Remove from heat; stir in 1 tablespoon amaretti or gingersnap crumbs.
- Cool to room temperature.
