Heavenly Fruit Cake
- 4 eggs
- 1 1/2 c. light brown sugar
- 2 tsp. vanilla
- 1 stick margarine, room temperature
- 1 1/2 c. cake flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. nutmeg
- 8 oz. mixed candied fruit
- 8 oz. red cherries, candied
- 8 oz. green and red pineapple
- 1 lb. chopped dates
- 3 c. chopped nuts
- 1/2 c. flour
- Cut
- fruits
- into
- small pieces.
- Mix fruits, dates and nuts, then sprinkle with flour until coated; set aside.
- Sift together flour, salt, baking powder, allspice and nutmeg; set aside.
- Beat eggs
- until fluffy and light.
- Add sugar, margarine
- and
- vanilla; beat until fluffy and creamy.
- Stir flour mixturetnto
- egg mixture;
- beat until smooth.
- Stir in fruit and nuts.
- Pour into well-greased and floured 9-inch tube pan, spreading
- evenly.
- Bake in
- preheated 225u0b0 oven slowly for 2 1/4 hours
- or
- until done. Cool pan on rack 30 minutes.
- Wrap in foil.
