Pumpkin-Pineapple Squares

  1. In a large mixing bowl, beat eggs.
  2. Add pumpkin, pineapple, vanilla and oil.
  3. Mix until well blended.
  4. In a separate bowl, combine remaining ingredients.
  5. Add to egg mixture.
  6. Pour into 8 x 8 nonstick pan or foil tin.
  7. Bake at 375u0b0 for 55 minutes.
  8. Divide equally into 4 portions.
  9. Makes 4 servings as part of midday meal. Supplement as required.
