Pumpkin-Pineapple Squares
- 4 med. eggs
- 1 (16 oz.) can pumpkin
- 2 c. crushed pineapple, no sugar added
- 4 tsp. vanilla
- 2 Tbsp. vegetable oil
- 1-1/3 c. instant nonfat dry milk
- brown sugar replacement to equal 2/3 c. sugar
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. imitation butter flavoring
- 2 tsp. pumpkin pie spice
- 4 slices enriched white or whole wheat bread, crumbled in blender
- In a large mixing bowl, beat eggs.
- Add pumpkin, pineapple, vanilla and oil.
- Mix until well blended.
- In a separate bowl, combine remaining ingredients.
- Add to egg mixture.
- Pour into 8 x 8 nonstick pan or foil tin.
- Bake at 375u0b0 for 55 minutes.
- Divide equally into 4 portions.
- Makes 4 servings as part of midday meal. Supplement as required.
