Apple Cider Quick Bread
- 1-1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup packed brown sugar
- 3 tablespoons toasted wheat germ
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground nutmeg
- 2 large eggs, lightly beaten
- 1 large egg white
- 1/2 cup apple cider or unsweetened apple juice
- 1/4 cup plain yogurt
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup shredded peeled tart apple
- 1/3 cup golden raisins
- 1 teaspoon grated orange zest
- In a large bowl, combine the first nine ingredients. In a small bowl, combine the eggs, egg white, cider, yogurt, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the apple, raisins and orange zest.
- Transfer to a greased 9x5-in. loaf pan. Bake at 350u0b0 for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
