Jalapeno Bread
- 1/2 c. flour
- 1 c. yellow cornmeal
- 2 Tbsp. brown sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 3/4 tsp. chili powder
- 3/4 c. buttermilk
- 1 large egg
- 1 medium onion, chopped
- 7 oz. whole kernel corn
- 4 oz. chopped pimentos
- 3 1/2 oz. jalapenos, seeded and chopped
- 3 Tbsp. melted margarine
- 3 oz. shredded sharp Cheddar cheese
- 1 1/2 c. bottled salsa (optional)
- In a large bowl, combine first 6 ingredients.
- Make a well in the center. In a medium bowl, combine next 6 ingredients.
- Pour into well of dry mixture. Add margarine and blend in.
- Pour into greased 9 x 13-inch baking pan.
- Bake at 400u0b0 for 20 minutes. Sprinkle with Cheddar cheese and bake 5 minutes more to melt cheese.
- Serve with salsa or soup, if desired.
