Pumpkin Pie(Microwave)
- 2 eggs
- 1/2 c. sugar
- 1/2 c. firmly packed brown sugar
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1/4 tsp. allspice
- 1 (16 oz.) can pumpkin
- 1 (14 oz.) can evaporated milk
- 1 baked 9-inch pie shell
- In large bowl, combine all ingredients (except shell) in order given.
- Beat until well blended.
- Pour mixture into pie shell. Microwave, uncovered, 4 minutes, until edges begin to set.
- With a spoon, carefully pull the cooked portions to center of dish. Microwave, uncovered, an additional 6 to 8 minutes.
- Let stand 5 minutes.
- Turn pie plate one-half turn after 3 minutes and again pull cooked portion to center.
- Pie is done when knife inserted is clean.
- Cool.
- Makes one 9-inch pie.
