Carrots Au Gratin
- 5 Tbsp. margarine
- 1/2 c. cornflake crumbs or Italian bread crumbs
- 1/3 c. chopped onion
- 3 Tbsp. flour
- 1 tsp. pepper
- 1 1/2 c. milk
- 1 c. shredded Cheddar cheese
- 4 c. (approximately 1 1/2 bags) sliced carrots, cooked and drained
- 1 Tbsp. parsley
- Melt 2 tablespoons of margarine in small pan.
- Remove from heat and mix in crumbs.
- Set aside.
- Melt 3 tablespoons in large pan.
- Add onion and cook until tender.
- Stir in flour, salt and pepper.
- Remove from heat; add milk, gradually stirring until smooth.
- Return to medium heat and cook until thickened, stirring constantly.
- Add cheese; stir until blended.
- Remove from heat. Stir in carrots and parsley.
- Spread in an 8-inch square greased baking dish and sprinkle crumbs evenly over top.
- Bake at 350u0b0 for about 20 minutes until heated and bubbly.
- Remove from oven.
- Let stand 5 minutes before serving.
- Serves 8.
