Carrots Au Gratin

  1. Melt 2 tablespoons of margarine in small pan.
  2. Remove from heat and mix in crumbs.
  3. Set aside.
  4. Melt 3 tablespoons in large pan.
  5. Add onion and cook until tender.
  6. Stir in flour, salt and pepper.
  7. Remove from heat; add milk, gradually stirring until smooth.
  8. Return to medium heat and cook until thickened, stirring constantly.
  9. Add cheese; stir until blended.
  10. Remove from heat. Stir in carrots and parsley.
  11. Spread in an 8-inch square greased baking dish and sprinkle crumbs evenly over top.
  12. Bake at 350u0b0 for about 20 minutes until heated and bubbly.
  13. Remove from oven.
  14. Let stand 5 minutes before serving.
  15. Serves 8.
