Apple Oat Snack Cake
- 1 cup boiling water
- 1/2 cup old-fashioned oats
- 1-3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1/3 cup unsweetened applesauce
- 1 large egg
- 1-1/2 teaspoons vanilla extract
- 1 medium apple, peeled and chopped
- 1/2 cup old-fashioned oats
- 1/4 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons cold butter
- In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a bowl, combine the sugars and applesauce; beat well. Add the egg, vanilla and oat mixture; mix well. Stir into dry ingredients just until combined. Fold in apple.
- Pour into an 8-in. square baking dish coated with cooking spray. For the topping, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Bake at 350u0b0 for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
