Canadian Cheese Soup
- 1/4 c. butter or margarine
- 1/2 c. finely diced onions
- 1/2 c. finely diced carrots
- 1/2 c. finely diced celery
- 1/4 c. flour
- 1 1/2 Tbsp. cornstarch
- 1 qt. chicken stock or canned chicken broth
- 1 qt. milk
- 1/8 tsp. soda
- 1 c. grated Cheddar cheese
- 2 tsp. salt
- 2 Tbsp. parsley, chopped fine
- Melt butter in 3-quart glass casserole.
- Add onions, carrots and celery.
- Cover and cook with microwave 12 minutes or until vegetables are tender, stirring every 2 minutes.
- Add flour and cornstarch.
- Cook 1 1/2 minutes or until bubbly.
- Add stock and milk.
- Stir until smooth.
- Cook 18 minutes, stirring after 12 minutes.
- Add soda, cheese and salt.
- Cook 3 minutes.
- Sprinkle parsley on top to serve.
- Recipe yields 8 to 10 servings.
