Canadian Cheese Soup

  1. Melt butter in 3-quart glass casserole.
  2. Add onions, carrots and celery.
  3. Cover and cook with microwave 12 minutes or until vegetables are tender, stirring every 2 minutes.
  4. Add flour and cornstarch.
  5. Cook 1 1/2 minutes or until bubbly.
  6. Add stock and milk.
  7. Stir until smooth.
  8. Cook 18 minutes, stirring after 12 minutes.
  9. Add soda, cheese and salt.
  10. Cook 3 minutes.
  11. Sprinkle parsley on top to serve.
  12. Recipe yields 8 to 10 servings.
