Calico Carrot Chop-Chop

  1. Put carrots, green and red peppers and onions through food chopper, using a coarse blade.
  2. (There should be about 14 cups.) Place in a kettle; add boiling water to cover.
  3. Let stand 5 minutes, then drain well.
  4. Return vegetables to kettle.
  5. Stir in remaining ingredients.
  6. Heat, stirring several times, to boiling, then simmer, stirring once or twice for 5 minutes.
  7. Ladle into hot sterilized jars; seal following manufacturer's directions.
  8. Cool jars, label and date.
