Apple Pound Cake
- 2 1/2 c. flour
- 1 Tbsp. baking powder
- 1/4 tsp. baking soda
- 1 c. sugar
- 1/2 c. soft butter
- 1/4 c. buttermilk
- 4 eggs
- 2 medium Golden Delicious apples, peeled, cored and diced
- 2 tsp. vanilla
- Heat oven to 350u0b0.
- Butter and flour 10-cup tube pan.
- Mix flour, baking powder and baking soda.
- In a large bowl with electric mixer, beat sugar, butter and buttermilk until pale in color.
- Beat eggs in a small bowl and add egg alternately with flour mixture.
- Beat until well blended and fluffy.
- With a wooden spoon, stir in apples and vanilla.
- Pour batter in pan.
- Bake 1 hour or until a toothpick comes out clean.
- Cool in pan on wire rack 10 minutes.
- Turn cake out on wire rack and cool completely. Makes 10 servings.
