The Best Fruitcake
- 1 c. raisins
- 1 c. maraschino cherries, halved
- 1 c. cut up, pitted dates
- 1 c. blanched almonds
- 2 c. walnut pieces
- 3/4 c. flour
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. sugar
- 3 eggs
- 1 tsp. vanilla
- Lightly grease a 9 x 5 x 3-inch loaf pan.
- Line with waxed paper and grease the paper.
- Mix fruits and nuts in a large mixing bowl.
- Sift flour, baking soda, baking powder, salt, and sugar over mixture; toss to coat all nuts and fruits with flour.
- Set aside. Beat eggs until foamy, then add vanilla.
- Pour over fruit mixture and stir just until blended.
- Pour into prepared loaf pan.
- Bake at 300u0b0 for 1 1/2 hours.
- Remove from pan and cool on wire rack.
