Pistachio Cherry Squares
- 2 cups graham cracker crumbs (about 32 squares)
- 1/2 cup butter, melted
- 1/4 cup sugar
- 1 package (8 ounces) cream cheese, softened
- 2/3 cup confectioners' sugar
- 1 carton (8 ounces) frozen whipped topping, thawed
- 2-1/2 cups cold milk
- 2 packages (3.4 ounces each) instant pistachio pudding mix
- 1 carton (8 ounces) frozen whipped topping, thawed
- 2 cans (21 ounces each) cherry pie filling
- Combine the cracker crumbs, butter and sugar; press into an ungreased 13-in. x 9-in. dish. Refrigerate. In a bowl, beat cream cheese and sugar; fold in whipped topping. Spread over crust. In a bowl, beat milk and pudding mixes on low speed for 2 minutes. Spread over cream cheese layer; chill until firm, about 1 hour.
- Spread whipped topping over pudding layer. Top with pie filling. Refrigerate overnight. Cut into squares.
