Pecan Tarts
- 1 c. brown sugar
- 2 Tbsp. shortening
- 1/8 tsp. salt
- 1 c. milk
- 2 1/2 Tbsp. flour
- 1/2 c. nut meats
- 1/2 c. hot water
- 1 tsp. vanilla
- 2 eggs, lightly beaten
- 1 Tbsp. powdered sugar
- Prepare medium syrup by boiling sugar and water together; set aside to cool.
- Add flour and salt to lightly beaten eggs.
- Add milk and mix well.
- Cook mixture in double boiler until thick and smooth, stirring constantly.
- To this add half of the brown syrup and shortening. Remove from fire.
- Add vanilla and cool.
- Put 2 tablespoons of mixture in each tart shell.
- Place 4 pecans on top. Use remaining syrup to cover the pecans and put a tablespoon of whipped cream in the center of each.
- Put in icebox and chill. Makes 12 tarts.
