Refreshing Lime Tartlets
- 2/3 cup all-purpose flour
- 2 tablespoons sugar
- 1/4 cup cold butter
- 1 large egg yolk
- 1-1/2 teaspoons cold water
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 cup heavy whipping cream
- 1/3 cup lime juice
- 1 tablespoon grated lime zest
- 3/4 cup sour cream
- 3 tablespoons butter

- In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Add egg yolk. Gradually add water, tossing with a fork until a ball forms. Divide into four portions.
