Peach Fruitcake
- 2 1/2 c. all-purpose flour
- 1 c. packed brown sugar
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 16 oz. chopped, mixed candied fruits and peel (2 c.)
- 1 c. chopped walnuts
- 1 c. raisins
- 1 (16 oz.) can peaches, drained and chopped
- 1 (14 oz.) can sweetened condensed milk
- 1 c. prepared mincemeat
- 1/4 c. apricot brandy
- In very large mixing bowl, stir together flour, brown sugar, baking soda, cinnamon and cloves.
- Stir in fruits and peels, nuts and raisins.
- Add peaches, milk, mincemeat and brandy; mix well. Turn into 2 greased and floured 8 x 4 x 2-inch loaf pans.
- Bake in a 300u0b0 oven for 2 hours or until done.
- Cool completely; remove from pans.
- Wrap in foil or clear plastic wrap and store in a cool place.
- Makes 2 fruitcakes.
