Round Steak Louisiana
- 4 medium sweet potatoes or yams, peeled and cut
- 1 large onion, sliced
- 1 medium green pepper, cut in wedges
- 1 1/2 lb. beef round steak
- salt
- 2 Tbsp. oil
- 1 clove garlic, minced
- 3 Tbsp. flour
- 1 (16 oz.) can tomatoes, cut up
- 1/2 c. beef broth
- 1 tsp. sugar
- 1/2 tsp. thyme, crushed
- 1/8 tsp. pepper
- Layer sweet potatoes, onion and green peppers in a large crock-pot.
- Cut meat in 6 serving-size pieces.
- Sprinkle with salt and brown in hot oil.
- Transfer meat to crock-pot.
- Reserve drippings in skillet.
- Cook garlic in reserved drippings until tender but not brown.
- Blend in flour.
- Add undrained tomatoes, beef broth, sugar, thyme, pepper and 1/2 teaspoon salt.
- Cook and stir until thickened and bubbly; pour on meat and vegetables.
- Cook on low 6 to 8 hours or high 3 to 4 hours.
- Makes 6 servings.
