Round Steak Louisiana

  1. Layer sweet potatoes, onion and green peppers in a large crock-pot.
  2. Cut meat in 6 serving-size pieces.
  3. Sprinkle with salt and brown in hot oil.
  4. Transfer meat to crock-pot.
  5. Reserve drippings in skillet.
  6. Cook garlic in reserved drippings until tender but not brown.
  7. Blend in flour.
  8. Add undrained tomatoes, beef broth, sugar, thyme, pepper and 1/2 teaspoon salt.
  9. Cook and stir until thickened and bubbly; pour on meat and vegetables.
  10. Cook on low 6 to 8 hours or high 3 to 4 hours.
  11. Makes 6 servings.
