Southern Caviar

  1. Combine peas, peppers, onion and garlic.
  2. In separate bowl, whisk together vinegar, oil and mustard; pour over bean mixture. Season with tabasco, salt and pepper.
  3. Mash bean mixture slightly; refrigerate until ready to serve.
  4. Sprinkle with parsley before serving.
