Southern Caviar
- 3 cans black-eyed peas, drained
- 1/2 c. finely chopped green pepper
- 1/2 c. finely chopped red pepper
- 1 can (2 1/4 oz) diced green chiles, drained
- 3/4 c. finely chopped onion
- 2 cloves garlic, minced
- 1/4 c. red wine vinegar
- 1/4 c. olive oil
- 1 Tbsp. Dijon mustard
- Tabasco
- Salt
- Fresh cracked pepper
- Chopped fresh parsley
- Tortilla chips or melba crackers
- Combine peas, peppers, onion and garlic.
- In separate bowl, whisk together vinegar, oil and mustard; pour over bean mixture. Season with tabasco, salt and pepper.
- Mash bean mixture slightly; refrigerate until ready to serve.
- Sprinkle with parsley before serving.
