Soupe 'A L'Oignon Au Gratin(French Onion Soup With Cheese)
- 6 medium onions, thinly sliced
- 1 stick butter or margarine
- 1 tsp. sugar
- 1 tsp. salt (optional)
- dash of ground nutmeg
- 7 c. strong beef bouillon (canned or made with boullion cubes or half of each)
- 1/4 c. sherry, Port or white wine
- 6 slices French bread (thin), dried in oven
- grated Swiss cheese (about 2 to 3 Tbsp. for each serving)
- Saute onions in butter until soft.
- Add sugar and nutmeg.
- Toss well.
- Cook down slightly until onions are a golden color.
- Add hot bouillon and bring to a boil.
- Add wine.
- Reduce heat and simmer for 10 to 15 minutes.
- Add salt if needed or to taste.
- Ladle soup into 6 ovenproof bowls or pots and top each with 1 piece of bread and grated cheese.
- Cook in preheated 300u0b0 oven for 10 minutes or under broiler until cheese is melted and bubbly.
- Serves 6.
