Ada'S Fruit Cake
- 1/2 lb. oleo
- 1 1/2 c. sugar
- 6 eggs
- 2 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. allspice
- 1 tsp. lemon juice
- 1 tsp. almond flavoring
- 1 tsp. vanilla
- 1 c. white raisins
- 1 can coconut
- 1/2 c. fig preserves
- 5 c. pecans
- 1 lb. candied cherries
- 1 lb. candied pineapple
- watermelon rind preserves (add a few)
- Sift dry ingredients; cream oleo and sugar.
- Add eggs, one at a time with flour mixture.
- Add flavorings, chopped fruits and nuts.
- Reserve 1/2 cup flour for fruits and nuts to roll around in to keep from sticking together.
- Bake at 250u0b0 in loaf pan for 2 1/2 to 3 hours.
