Fish With Linguine
- 1 lb. fresh fish, shrimp or scallops
- 8 oz. tomato puree
- 1/2 lb. linguine
- 1/4 c. olive oil
- 1 medium chopped onion
- 2 cloves minced garlic
- 1/4 c. chopped parsley
- 3 chopped fresh basil leaves or 1/2 tsp. dried
- 1 bay leaf
- 1 Tbsp. sugar
- salt and pepper to taste
- Pecorino and Romano cheese, grated
- Saute onion and garlic for 2 minutes on low heat.
- Add tomato puree, bay leaf, parsley, basil, salt, pepper and sugar.
- Simmer for 15 minutes.
- Add fish (cut into 1 1/2-inch pieces) and simmer until fish is white or about 15 minutes. Pour over cooked linguine and sprinkle Pecorino and Romano grated cheese over top and serve. May remove fish from sauce and serve separately over pasta.
