Cucumber Sandwiches
- 2 cucumbers
- 1/2 c. vinegar
- 1/2 c. water
- salt to taste
- 1 (8 oz.) pkg. cream cheese
- salt and pepper to taste
- Tabasco sauce
- Worcestershire sauce
- 2 drops green food coloring
- 1 medium diced onion
- mayonnaise
- Marinate quartered cucumbers in vinegar and water mixture. Add salt and diced onion. Cover and refrigerate overnight.
- Drain and discard onion. Grate cucumber and drain well again (squeeze as much liquid out as possible). Add to softened cream cheese. Season to taste with mayonnaise, salt and pepper, Tabasco sauce, Worcestershire sauce and food coloring.
- Spread bread rounds or shapes lightly with soft butter, then cucumber spread.
- Layer with damp paper towel in Tupperware and chill.
- May be made hours ahead, even a day before.
