Christmas Crunches
- 1/2 c. butter or margarine, softened
- 1/2 c. sugar
- 1/2 c. firmly packed brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1 c. corn flakes
- 1/2 c. shredded coconut
- 1/2 c. coarsely chopped pecans
- 1 c. regular oats, uncooked
- Cream butter; add sugar and beat until light and fluffy.
- Add eggs and vanilla, mixing well.
- Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture, beating well after each addition.
- Stir in oats, corn flakes, coconut and pecans.
- Shape dough in 1-inch balls and place 2 inches apart on lightly greased cookie sheet.
- Bake at 350u0b0 for 10 to 12 minutes. Cool on wire racks.
- Yields 3 1/2 dozen.
