Chicken Or Turkey Strata(Low-Fat)
- 8 slices whole wheat bread, cut into 1-inch cubes
- 2 c. skinned and cooked cubed turkey or chicken
- 1/2 c. finely chopped onion
- 2/3 c. finely chopped celery
- 1 (4 oz.) can diced green chilies (optional)
- 1/2 c. reduced-fat mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 corn tortillas
- 3 eggs, slightly beaten
- 1 3/4 c. 2% low-fat milk
- 1 c. low-fat cottage cheese
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- Place the cubes of bread on bottom of a 12 x 8-inch nonstick pan.
- Combine the chicken, onion, celery, chilies, mayonnaise, salt and pepper in a medium-sized bowl and spoon over the bread cubes. Tear tortillas into bite-sized pieces and place them on top of the chicken mixture.
- Combine the eggs, milk, cottage cheese and soup in a small bowl and pour over the top.
- Cover and refrigerate overnight to allow the flavors to blend.
- Preheat oven to 325u0b0 and bake for 50 minutes to 1 hour or until the dish is firm and set. Remove from the oven and let stand for 10 minutes before serving. Serves 8. Contains 328 calories per serving.
