Gloria'S Shaker Salad

  1. Cook string beans in boiling water to cover by 1 inch.
  2. Boil briskly, uncovered, for 4 to 5 minutes.
  3. Drain string beans and run under cold water.
  4. Spread string beans on towel to drain. Refrigerate.
  5. In bowl, combine vinegar, onions, thyme, savory, dry mustard, salt and pepper.
  6. Mix ingredients well with whisk.
  7. Pour oil in mixture until smooth and thick.
  8. Add string beans, lettuce, scallions and toss together gently but thoroughly.
  9. Makes 4 to 6 servings.
