Gloria'S Shaker Salad
- 1/2 lb. fresh green string beans, cut in 1 1/2-inch pieces
- 3 Tbsp. tarragon vinegar
- 1 Tbsp. finely chopped onion
- 1/2 tsp. crumbled dry thyme
- 1/2 tsp. dried savory
- 1/2 tsp. dry mustard
- 1 tsp. salt
- ground pepper to taste
- 1/2 c. olive oil
- 2 firm heads bibb or Boston lettuce
- 2 Tbsp. finely chopped scallions
- Cook string beans in boiling water to cover by 1 inch.
- Boil briskly, uncovered, for 4 to 5 minutes.
- Drain string beans and run under cold water.
- Spread string beans on towel to drain. Refrigerate.
- In bowl, combine vinegar, onions, thyme, savory, dry mustard, salt and pepper.
- Mix ingredients well with whisk.
- Pour oil in mixture until smooth and thick.
- Add string beans, lettuce, scallions and toss together gently but thoroughly.
- Makes 4 to 6 servings.
