Ham With Cider Glaze
- 1 cooked bone-in ham (5 to 6 lb. rump or shank portion)
- 2 c. apple cider or apple juice
- 1 c. honey
- 1/2 c. cider vinegar
- 1/4 c. Dijon-style mustard
- 2 tsp. chili powder
- 1 Tbsp. butter
- 1/2 tsp. apple pie spice
- Preheat oven to 325u0b0.
- Score ham with diagonal cuts in a diamond pattern.
- Place ham on a rack in a shallow roasting pan. Insert a meat thermometer; bake ham until thermometer registers 140u0b0 (about 2 hours).
- Meanwhile, in a large saucepan combine cider, honey, vinegar, mustard, and chili powder.
- Bring to boiling; reduce heat.
- Boil gently, uncovered, about 15 minutes, stirring frequently (watch carefully, as mixture will bubble up). You should have about 2 cups of mixture.
- Remove half of the mixture to a small bowl. Stir in butter and 1/4 teaspoon of the pie spice; set aside for sauce.
