Oatmeal Pecan Cookie
- 2 c. butter- stick Land O Lakes
- 2 c. sugar
- 2 c. brown sugar
- 4 eggs
- 2 tsp. vanilla
- 4 c. flour
- 5 c. blended oatmeal in food processor
- 1 tsp. salt
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 - 4 oz chocolate chips- semi sweet
- 1- 8 oz. grated Hershey Bar
- 3 c. pecans
- Blended oatmeal measure and blend in a blender to a fine powder.
- Cream butter and both sugars.
- Add eggs and vanilla.
- Mix together with flour, oatmeal, salt, baking powder and baking soda. Add chocolate chips, Hershey Bar and nuts.
- Roll into balls and place 2 in. apart on cookie sheet.
- Bake 375 degrees for 6 minutes.
- Makes 112 cookies, recipe can be halved.
- Roll to size of walnuts do not press.
