Glazed Chocolate Tea Bread
- 1/2 cup applesauce
- 1/3 cup shortening
- 2 eggs
- 1/3 cup water
- 1-1/4 cup sugar
- 1-1/2 cups all-purpose flour
- 1/3 cup baking cocoa
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup (6 ounces) semisweet chocolate chips
- 1/3 cup chopped walnuts
- 1/2 cup confectioners' sugar
- 1 to 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- Pinch salt
- In a bowl, combine applesauce, shortening, eggs, water and sugar; beat on low speed for 30 seconds. Combine dry ingredients; add to applesauce mixture. Beat on low for 30 seconds. Beat on high for 2-1/2 minutes, scraping bowl occasionally. Fold in the chocolate chips and nuts. Pour into a greased and floured 9x5-in. loaf pan. Bake at 350u0b0 for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely. Combine glaze ingredients; drizzle over bread.
