Chinese Pepper Steak
- 1 lb. round steak
- 1 Tbsp. diet margarine
- 2 Tbsp. finely chopped onion
- 1 clove garlic, crushed
- 2 large green peppers
- 1/2 c. celery, diagonally sliced
- 1/2 c. beef consomme
- salt and pepper
- 2 Tbsp. chopped pimento
- 2 tsp. cornstarch
- 3 Tbsp. water
- 1 Tbsp. soy sauce
- Trim the meat of all fat and cut into strips.
- Chop onion, garlic and pimento.
- Cut green peppers into strips.
- Place diet margarine in a nonstick skillet and heat it over a low heat.
- Add the strips of beef and brown on both sides.
- Add onion, garlic, green peppers and celery.
- Add consomme.
- Season the whole mixture with salt and pepper.
- Cover; simmer 20 minutes.
- Do not boil. Add pimento.
- Thicken with cornstarch mixture.
- Cover; simmer the addition for 5 minutes.
- Makes 4 servings (1001.4 calories in whole recipe; 250.4 each serving).
