Applesauce Spice Cake

  1. Combine 2 1/2 cups water and raisins in a small saucepan. Bring to a boil.
  2. Boil until water evaporates.
  3. Remove from heat. Add applesauce, eggs, Sweet 'N Low, oil and remaining 1/2 cup water.
  4. Stir until well combined.
  5. Sift flour, cinnamon and soda. Gradually add to applesauce with vanilla, stirring after each addition.
  6. Spoon into a 10-inch Bundt pan coated with Pam.
  7. Bake at 350u0b0 for 40 to 45 minutes.
  8. Cool in pan 10 minutes.
  9. Remove and cool on a wire rack.
