Broccoli And Cheese Casserole
- 1 small onion, chopped
- 1 T. water
- 1 (10 oz.) pkg. frozen chopped broccoli
- 1 ( 7 oz.) pkg. long grain and wild rice with mushrooms mix
- 1 T. corn oil margarine
- 1/4 t. salt
- 2 T. flour
- 1 c. evaporated skim milk
- 3 oz. American cheese, shredded
- Cook onion in water in skillet until transparent, set aside. Microwave broccoli following package directions for 6 minutes; drain. Prepare rice following package directions omitting 2 teaspoons margarine. Melt margarine in a large saucepan; remove from heat. Add salt and flour, stirring until smooth. Add milk gradually, stirring until well blended. Return to heat and bring to a boil, stirring constantly. Boil for 1 minute, stirring constantly. Stir in cheese and cook until cheese melts, stirring constantly. Add onions, broccoli and rice; mix well. Spray a
- 1 1/2 qt. baking dish with non-stick cooking spray. Pour broccoli mixture into baking dish. Bake at 350u0b0 for 30 minutes. Makes 8 servings.
