Chicken Broccoli Delight
- 1 chicken, cut up (2 or 3 c.)
- 2 (10 oz.) pkg. frozen chopped broccoli
- 2 sticks margarine
- 2 cans cream of chicken soup
- 1/2 c. mayonnaise
- 1 1/2 tsp. lemon juice
- 1 c. bread crumbs
- 1/2 (12 oz.) pkg. stuffing mix
- Simmer chicken in water until tender.
- Drain, bone and cut into bite size pieces.
- Cook broccoli according to package directions; drain off liquid.
- Melt 1 1/2 sticks of the margarine. Add soup, mayonnaise and lemon juice.
- Mix thoroughly.
- Melt remaining margarine; mix with bread crumbs.
- Place alternate layers of chicken, broccoli, stuffing mix and soup mixture in a 9 x 13 x 2-inch pan or large casserole, ending with soup mixture. Top with buttered crumbs.
- Bake at 350u0b0 for 20 to 35 minutes or until bubbly and golden brown.
- Serves 12.
