Halibut-Vegetable Dinner Bake(Serves 6)
- 2 lb. halibut steaks or other fish steaks (fresh or frozen)
- 2/3 c. thinly sliced onion
- 1 1/2 c. chopped, fresh mushrooms
- 1/3 c. chopped tomato
- 1/4 c. chopped green pepper
- 1/4 c. chopped, fresh parsley
- 3 Tbsp. chopped pimiento
- 1/2 c. dry white wine
- 2 Tbsp. fresh lime or lemon juice
- 1/2 tsp. salt
- 1/4 tsp. dill weed
- 1/8 tsp. white pepper
- lemon wedges
- Thaw fish, if frozen; cut into serving size portions.
- Arrange onion in bottom of greased 12 x 8 x 2-inch baking pan.
- Top onion with fish.
- Combine remaining ingredients and spread on top of fish.
- Combine wine, lime juice and seasonings; pour over vegetables.
- Bake in preheated 350u0b0 oven for 25 to 30 minutes or until fish flakes easily when tested with a fork.
- Serve with lemon wedges.
- Contains 230 calories per serving.
