Shrimp Fajitas(Original Recipe)
- 1/2 lb. shrimp, cleaned and chopped or 2 cans medium shrimp
- 2 zucchini, chopped
- 1 red pepper (sweet), chopped
- 1 bunch scallions, minced
- 1 onion, chopped
- 2 tomatoes, seeded and chopped
- 1/8 tsp. jalapeno powder
- 2 Tbsp. canola oil
- 1 pinch (1/8 tsp.) fajiti seasoning (optional)
- salsa
- flour tortillas
- Heat pan over high heat.
- Add oil and heat 10 seconds.
- Add shrimp and cook until pink.
- Remove from pan.
- Add onions and scallions to pan and brown quickly.
- Remove from pan.
- Add red pepper and brown quickly.
- Remove from pan.
- Add zucchini and brown quickly.
- Remove from pan.
- Add tomatoes and brown quickly. Put shrimp and all vegetables back in skillet together with jalapeno powder and fajita seasoning.
- Mix well and warm through. Serve on warm tortillas and salsa.
