Red Beans And Rice
- 1 lb. dried red kidney beans
- 1 meaty ham bone or ham hocks
- 2 large onions, coarsely chopped
- 4 cloves garlic, minced
- 1 stick butter
- 4 chicken bouillon cubes
- 2 bay leaves
- 1 lb. smoked sausage
- red pepper
- black pepper
- salt
- Tabasco
- rice
- Soak beans in water overnight.
- Drain.
- In large pot, melt butter and saute onion and garlic.
- Add ham bone, (I find it best to always add extra ham), dried beans and cover with water.
- Add bouillon cubes, pepper and Tabasco.
- Simmer slowly for approximately 2 hours or until beans are tender.
- During last 30 minutes of cooking, add sausage and salt.
- Adjust seasoning to taste.
- Serve over cooked rice with extra Tabasco sauce on side and crusty French bread.
- Serves 8.
