Fettucine With Shrimp And Green Onion Sauce
- 1 Tbsp. butter
- 1 lb. medium shrimp, peeled and deveined
- 1 1/2 c. sliced green onions
- 1/2 c. chicken broth
- 1/2 c. milk
- 1/2 c. grated Parmesan cheese
- 2 Tbsp. wine
- 1/2 tsp. pepper
- 1/4 tsp. nutmeg
- 2 tsp. cornstarch
- 2 tsp. water
- 8 oz. uncooked spinach fettucine
- Saute shrimp in butter for 5 minutes.
- Remove and drain.
- Add onions and saute until tender.
- Add broth, milk, Parmesan cheese, wine, pepper and nutmeg.
- Stir well.
- Combine cornstarch and water, then add to mixture.
- Reduce heat and simmer 5 minutes, until cheese melts and sauce thickens.
- Add shrimp and cook until thoroughly heated.
- Toss with cooked noodles.
