Chicken And Wild Rice
- 3 c. cooked rice
- 3 c. cooked wild rice
- 2 cans cream of chicken soup
- 1 can cream of mushroom soup
- 1 can broccoli cheese soup
- 1 pt. half and half
- 2 chickens, deboned
- 2 c. chopped celery
- 2 c. chopped bell pepper
- 2 small chopped onions
- 1 can sliced water chestnuts
- 1 small jar pimentos
- 1 stick butter
- grated cheese
- bacon bits
- Prepare rices (1 cup dry rice - 3 cups cooked).
- (One 6 ounce Uncle Ben's rice is what I use.)
- Saute in butter, celery, bell pepper, onion, water chestnuts and pimentos.
- Mix in soups, half and half, chicken and rice.
- Allow mixture to blend well.
- Bake in oven at 350u0b0 for 30 minutes.
- Add grated cheese, cook and additional 5 to 10 minutes.
- Serve with bacon bits sprinkled.
