Low Country Shrimp Boil
- Hillshire Farms beef sausage (1 pkg./4 people)
- 2 to 3 onions, quartered
- 2 to 3 stalks celery, halved
- Old Bay seasoning
- Niblets frozen corn on the cob (2 cobs/person)
- 1/3 to 1/2 lb. shrimp/person
- 1 can beer
- salt to taste (sausage is salty so you don't need much)
- Approximately 1 1/2 hours prior to eating, cut sausage into 1 to 2-inch pieces and place in large pot with onions, celery, Old Bay and beer.
- Cover with water and bring to a boil.
- Cover, reduce heat to simmer and cook for 45 minutes.
- Place all of the frozen corn in the pot; adding more water if necessary to cover corn.
- Return to a boil and cook 5 more minutes.
- Add shrimp all at once and immediately stir into a rolling boil.
- Remove from heat and drain.
- Serve directly from pot, being careful not to overcook the shrimp.
- Serve with a salad and crusty French bread.
