Low Country Shrimp Boil

  1. Approximately 1 1/2 hours prior to eating, cut sausage into 1 to 2-inch pieces and place in large pot with onions, celery, Old Bay and beer.
  2. Cover with water and bring to a boil.
  3. Cover, reduce heat to simmer and cook for 45 minutes.
  4. Place all of the frozen corn in the pot; adding more water if necessary to cover corn.
  5. Return to a boil and cook 5 more minutes.
  6. Add shrimp all at once and immediately stir into a rolling boil.
  7. Remove from heat and drain.
  8. Serve directly from pot, being careful not to overcook the shrimp.
  9. Serve with a salad and crusty French bread.
