Linguine With Chicken Sauce

  1. Chop tomatoes; cover with hot water.
  2. Soak until needed.
  3. Cut chicken into bite-size pieces and set aside.
  4. In nonstick skillet, cook onion in olive oil until lightly browned, then toss in garlic and chicken from skillet.
  5. Then add flour and broth,
  6. Heat, stirring, until bubbly.
  7. Drain tomatoes and add them along with parsley and basil to mixture in skillet.
  8. Return chicken to pan and cook on low heat for another 10 minutes.
  9. Serve over linguine; top with grated cheese.
  10. Serves 6.
