Linguine With Chicken Sauce
- 1 (3 oz.) pkg. sun-dried tomatoes
- 1 1/2 lb. boneless chicken breasts
- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 3 garlic cloves, crushed
- 3 Tbsp. flour
- 1 c. chicken broth
- 1 Tbsp. chopped fresh parsley
- 1 tsp. chopped fresh basil
- 1 lb. cooked linguine
- grated Parmesan cheese
- Chop tomatoes; cover with hot water.
- Soak until needed.
- Cut chicken into bite-size pieces and set aside.
- In nonstick skillet, cook onion in olive oil until lightly browned, then toss in garlic and chicken from skillet.
- Then add flour and broth,
- Heat, stirring, until bubbly.
- Drain tomatoes and add them along with parsley and basil to mixture in skillet.
- Return chicken to pan and cook on low heat for another 10 minutes.
- Serve over linguine; top with grated cheese.
- Serves 6.
