Nova Scotian Plum Loaf
- 1 1/2 c. boiling water
- 1 c. mashed potatoes
- 1 c. brown sugar
- 1 c. honey
- 2 packets dry active yeast
- 2 c. scalded milk
- 1/2 c. shortening
- 3 c. rye flour (for sponge)
- 4 c. unbleached white flour (for sponge)
- 2 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 lb. raisins
- 1/2 c. chopped walnuts
- 3 c. unbleached white flour
- Combine boiling water, mashed potatoes and brown sugar.
- Proof yeast and add to cooled potato mixture.
- Add scalded milk, shortening and honey.
- Add the amount of flours needed to make a sponge.
- Let rise for 30 minutes.
- Add salt, soda, nutmeg, cinnamon, raisins and nuts.
- Knead.
- Let rise until doubled (1 hour).
- Divide into 4.
- Roll out each loaf and sprinkle with a cinnamon/sugar mixture.
- Roll up into loaves.
- (Optional and recommended:
- Let rise again.)
- Bake for 65 minutes at 350u0b0. Makes 4 loaves.
