Nova Scotian Plum Loaf

  1. Combine boiling water, mashed potatoes and brown sugar.
  2. Proof yeast and add to cooled potato mixture.
  3. Add scalded milk, shortening and honey.
  4. Add the amount of flours needed to make a sponge.
  5. Let rise for 30 minutes.
  6. Add salt, soda, nutmeg, cinnamon, raisins and nuts.
  7. Knead.
  8. Let rise until doubled (1 hour).
  9. Divide into 4.
  10. Roll out each loaf and sprinkle with a cinnamon/sugar mixture.
  11. Roll up into loaves.

  13. Let rise again.)
  14. Bake for 65 minutes at 350u0b0. Makes 4 loaves.
