Apple Bread
- 2 1/4 c. flour
- 1/2 tsp. salt
- 1 tsp. soda
- 2 eggs
- 1 tsp. grated lemon rind
- 1 c. unpeeled raw apples, chopped fine
- 1/2 c. melted margarine
- 1 tsp. baking powder
- 1/2 tsp. nutmeg
- 1/2 c. sugar
- 1/2 c. light corn syrup
- 1 Tbsp. lemon juice
- 1/4 c. chopped nuts
- apple wedges
- Sift, measure flour and resift with baking powder, salt, nutmeg, soda and sugar.
- Break eggs into mixture.
- Add syrup and the rest of the ingredients.
- Mix as little as possible to form dough (until all ingredients are moistened).
- Turn into a well-greased loaf pan.
- Top with thin apple wedges, dipped in margarine, then in sugar.
- Bake in a 350u0b0 oven for about 1 hour. Cover pan for the first 20 minutes of baking.
