Green Tomato Nut Bread(In Honor Of Jimmy Creed)
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 2 eggs
- 1/2 c. sugar (white)
- 1/2 c. light brown sugar
- 1/2 c. vegetable oil
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 c. grated green tomatoes, drained
- 1 c. pecans or walnuts, chopped fine
- Combine the first 5 ingredients and set aside.
- Combine eggs, sugars, oil, lemon juice and vanilla in a large bowl.
- Beat well. Stir in the green tomatoes.
- Add dry ingredients, stirring until just moistened.
- Stir in nuts.
- Pour into a loaf pan.
- Bake at 350u0b0
- for 1 hour and 5 minutes.
- Cool in the greased and floured loaf pan for 10 minutes after it is done.
- Remove to wire rack and finish cooling.
