Ginger Cookies
- 6 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. ginger
- 1 tsp. cinnamon
- 1 c. brown sugar, packed
- 1/3 c. soft shortening
- 1 1/2 c. dark molasses
- 2/3 c. cold water
- Sift dry ingredients into a large bowl.
- Set aside.
- Cream shortening and brown sugar.
- Add molasses and water.
- Mix well. Add the dry ingredients one cup at a time.
- Cover and chill one hour.
- Preheat the oven to 350u0b0.
- Sprinkle flour on countertop. Divide the dough into four sections.
- Roll out each section to 1/2-inch thick.
- Cut out circles with the cookie cutter.
- Lift the cookies onto a cookie sheet with a spatula.
- Put cookies 2 inches apart on greased cookie sheet.
- Bake 12 to 15 minutes.
- Remove cookies from cookie sheet to cool.
- Do not stack cookies or they will stick together.
