Lumber Jack Bean Bake
- 1 (No. 300) can butter beans, drained
- 1 (1 lb.) can kidney beans, drained
- 1 (1 lb.) can pork and beans
- 8 slices bacon, fried crisp and diced
- 1 c. minced onion
- 1/2 c. sweet pepper, minced
- 1/3 c. light brown sugar, firmly packed
- 1/2 c. red wine vinegar
- 1 tsp. dry mustard
- 1 tsp. salt
- 1 tsp. garlic salt
- Fry
- bacon
- crisp; drain.
- In the usual amount of bacon drippings
- or
- margarine,
- add onion and sweet pepper and cook until
- tender.
- Add
- bacon and cook 5 minutes.
- Stir in sugar, vinegar,
- mustard, garlic salt and salt and simmer 15 minutes. In a large casserole (4 quart), combine the 4 types of beans; toss lightly
- to mix.
- Spoon bacon mixture over top of beans. Bake, uncovered,
- in
- preheated
- oven
- at
- 350u0b0
- for 50 to 60 minutes or until lightly browned and bubbly.
