Barbecued Beef Short Ribs
- 1 Tbsp. butter or margarine
- 1/3 c. chopped onion
- 1 heaping Tbsp. all-purpose flour
- 1 c. apple cider or apple juice
- 3 Tbsp. sweet pickle relish
- 1 Tbsp. catsup
- 1/4 tsp. dried whole basil
- 1/8 tsp. ground allspice
- dash of ground cloves
- 4 lb. short ribs
- Melt butter in a saucepan.
- Add onion and saute until tender. Add flour, stirring well.
- Gradually add cider.
- Cook over medium heat, stirring constantly, until thickened.
- Stir in relish, catsup, basil, allspice and cloves.
- Cut ribs into serving size pieces and grill over slow coals for 1 hour and 10 minutes.
- Brush ribs with sauce.
- Cook additional 20 minutes, basting and turning frequently.
- Serve with remaining sauce.
